Ingredients
  

  • 1/2 Tablespoon brown rice syrup sugar
  • 1/2-1 teaspoon soy sauce
  • 2 Tablespoon mayonnaise
  • 1 Tablespoon Japanese cucumber minced
  • 1-2 Tablespoon onion minced
  • 2 hard-boiled eggs peeled and crushed
  • 4 slices white sandwich bread

Instructions
 

  • sprinkle salt lightly over cucumber & onion and leave them until soften.
  • Gently squeeze the marinating liquid from the cucumbers & onion.
  • Mix all all ingredients.
  • spread them on the sandwich.
  • Trim crusts from bread & each sandwich into four triangular wedges.
